ENGLISH ABSTRACT: The red meat and poultry slaughterhouse industry are one of the fastest growing, owing to increased meat production and consumption worldwide. However, the volume of slaughtering derivatives produced during the generation of meat products by these two industries is a breeding ground for diseases and other forms of pollution that may affect the health of both humans and other animals, as well as the environment. In addition, these slaughtering derivatives might be a potential resource for recovering value-adding goods, reducing the deterioration rate of the environment and loss of materials. As a result, there is a growing need for safe and efficient disposal and utilisation methods to control the impact on the environment, economy, and society following animal slaughtering. A requirement to sustainably feed a growing population and find more sustainable and circular alternative technologies for the disposal and utilisation of slaughtering derivatives undoubtedly create opportunities for several role players. This dissertation highlights the technologies employed worldwide to effectively dispose of and utilise red meat and poultry slaughtering derivatives. A comprehensive bibliometric analysis was of great value to identify the most sustainable, circular, and commonly used technologies, considering the different slaughtering derivatives generated from the red meat and poultry slaughterhouse facilities. The results highlighted a diverse range of technologies available to dispose of and utilise such derivatives. The state and production of low-throughput and high-throughput, red meat and poultry slaughtering activities in the Western Cape district of South Africa were also analysed throughout the report. A total of 42 slaughterhouses (36 red meat and six poultry) were investigated to identify their disposal and utilisation practices. From the information gathered from the literature study and the Western Cape slaughtering industry, a circular economy framework was developed. The framework guides the slaughterhouses on the technology necessary to dispose of and utilise specific slaughtering derivatives. The framework further provides information regarding the number of input materials required for each technology, output materials required, and resources necessary to implement each technology successfully. The number of emissions of each technology, processing time, and level of expertise are also included within the framework. The framework has been validated by various Subject Matter Experts (SMEs) in the field, focusing on its practicality and usefulness. Semi-structured interviews were held with SMEs who provided feedback and insight to the researcher on the developed framework. The output of the interviews was then employed to make improvements to the framework and add validation and completeness. Through the validation process, it was found that the circular economy framework aims to be a fruitful interpretative framework. It provides valuable feedback and recommendation to low-throughput and high-throughput slaughterhouse facilities in the Western Cape province on transitioning to a circular economy beyond their current stage of operations by utilising slaughtering derivatives. AFRIKAANS OPSOMMING: Die rooivleis- en pluimvee-slaghuisbedryf is een van die mees snelgroeiendste industri ¨e vandag. Laasgenoemde is die resultaat van verhoogde vleisproduksie en -verbruik wˆereldwyd. Die volume afvalprodukte wat tydens die generering van vleisprodukte deur hierdie twee industri¨e geproduseer word, is egter ’n teelaarde vir siektes en ander vorme van besoedeling wat die gesondheid van beide mens en dier, sowel as die omgewing kan be¨ınvloed. Hierdie afval het egter die potensiaal om herwin te word om sodoende die impak wat hierdie afval op die agteruitgang van die omgewing het, te verminder. Daar bestaan tans ’n groeiende behoefte aan veilige en doeltreffende verwyderings- en benuttingsmetodes om die impak op die omgewing, ekonomie en samelewing na diereslagting te beheer. Die vereiste om ’n groeiende bevolking volhoubaar te voed en meer sirkulˆere alternatiewe tegnologie¨e te vind vir die wegdoen en benutting van hierdie afval, skep ongetwyfeld geleenthede vir verskeie rolspelers. Hierdie verslag beklemtoon die verskillende tegnologie¨e wat wˆereldwyd aangewend word om rooivleis en pluimvee- afval effektief te verwyder en sodoende waarde daaruit te put. ’n Omvattende bibliometriese analise van groot waarde ten einde die mees volhoubare en algemeenste tegnologie¨e wat gebruik word te identifiseer met die inagneming van die verskillende tipes afval wat in die rooivleis en pluimvee industrie gegenereer word. Die resultate beklemtoon ’n diverse reeks tegnologie¨e wat beskikbaar is om van hierdie afval ontslae te raak asook die hergebruik daarvan. Die toestand en produksie van lae-deurvloei en en ho¨e-deurvloei, rooivleis- en pluimveeslagaktiwiteite in die Wes-Kaap is ook deur die verslag ontleed. Daar is ‘n ondersoek geloots na 42 abbatoirs (36 rooivleis en ses pluimvee) om die verwyderings- en benuttingspraktyke te identifiseer. Vanuit die inligting ingewin deur die literatuurstudie en dieWes-Kaapse abbatoir bedryf, is ’n sirkulˆere ekonomiese raamwerk opgestel. Die raamwerk poog om aan abbatoirs leiding te verskaf rakende die tegnologi¨e wat benodig word om van spesifieke afvalprodukte ontslae te raak en ook hoe om hierdie produkte verder te benut ten einde waarde daaruit te genereer. Verder verskaf die raamwerk ook inligting rakende die aantal inset-materiaal wat benodig word vir elke tegnologie, die uitset-materiaal benodig, sowel as die hulpbronne wat benodig word om elkeen van hierdie tegnologi¨e suksesvol te implementeer. Die vlak van kundigheid en die verwerkingstyd wat elke tegnologie vereis is ook in die raamwerk ingesluit. Die raamwerk was deur verskeie vakkundiges bekragtig, met die fokus op hoe prakties en bruikbaar dit blyk te wees. Semi-gestruktureerde onderhoude is gevoer met vakkundiges wat terugvoer en insig aan die navorser verskaf het oor die ontwikkelde raamwerk. Die inligting verkry uit die onderhoude is aangewend om verbeterings aan die raamwerk aan te bring ten einde geldigheid en volledigheid by te voeg. Deur die proses was daar gevind dat die sirkulˆere ekonomiese-raamwerk daarop gemik is om ’n bruikbare raamwerk te wees. Dit verskaf waardevolle terugvoer en aanbevelings aan lae-deurvloei- en ho¨e-deurvloei abbatoirs in die Wes-Kaapse provinsie rakende die oorskakeling na ’n sirkulˆere ekonomie deur die hergebruik van produkte wat geproduseer word.
