ENGLISH ABSTRACT: The Cape of Good Hope became a site of heightened cultural exchange with the arrival of the Dutch in 1652. The VOC, who initially planned only to build a victualling station, soon settled at the Cape and in so doing, drew the Southernmost tip of Africa into a web of merchant cities, ports, and trading posts. Much has been written about this period in Cape history, with a significant portion of study devoted to social history. However, relatively little academic work has focused on the study of food at the Cape in the period of Dutch Occupation (1652-1795). This period saw a marked increase of interaction between local peoples, Dutch settlers, and so-called Cape Malay slaves. These interactions brought about the development of a new culinary expression that is still a lingering influence in South African cuisine today. A key objective of the historical branch of ‘foodways’ is considering the impact of human interaction on food culture. This thesis explores Cape foodways along three themes: the spaces of food preparation, the cooks who lived and worked in these spaces, and the food with which they worked. One of the most prosperous estates of the Cape Dutch era, Groot Constantia, is returned to throughout the thesis as a specific example with which to examine these themes. The material culture of the Cape kitchen is observed through primary sources such as household inventories, recipes and an original list of Cape cooks. As such, it draws neglected figures out of the shadows of the past and adds to what was previously written about Cape foodways in the period of Dutch Occupation, the essential contributions of enslaved cooks to Cape cuisine, and the connections between food and status at the Cape of Good Hope. AFRIKAANSE OPSOMMING: Met die aankoms van die Nederlanders in 1652 het die Kaap die Goeie Hoop ’n ruimte vanverhoogde kulturele uitruiling geword. Die VOC, wat aanvanklik net van plan was om ’nverversingstasie op te rig, het gou ’n nedersetting aan die Kaap gevestig en sodoende diesuidelike punt van Afrika in ’n web van handelstede, hawens en handelsposte betrek.Daar is al baie oor hierdie periode van die Kaapse geskiedenis geskryf, en ’n beduidendehoeveelheid hiervan is gewy aan sosiale geskiedenis. Tog is min akademiese fokusgeplaas op die bestudering van kos aan die Kaap tydens die Nederlandse Besetting (1652-1795). Tydens hierdie periode was daar ’n merkwaardige toename in die interaksietussen plaaslike bewoners, Nederlandse setlaars en sogenaamde ‘Kaaps-Maleise’ slawe.Hierdie wisselwerking het gelei tot die ontwikkeling van ’n nuwe kulinere uitdrukkingwat steeds ’n durende invloed op Suid-Afrikaanse kookkuns het.’n Sleuteldoel van die historiese vertakking van kosgeskiedenis is om die impak vanmenslike interaksie op koskultuur te oorweeg. Hierdie tesis ondersoek die Kaapsekosgeskiedenis deur aandag aan drie temas te skenk: die ruimtes waarin kos voorbereiis, die kokke wat in hierdie ruimtes gewoon en gewerk het, en die kos waarmee hullegewerk het. Een van die mees welvarende landgoedere van die Kaaps-Hollandse era,Groot Constantia, word meermale in hierdie tesis gebruik as ’n spesifieke voorbeeldwaardeur hierdie temas ondersoek kan word. Die materiele kultuur van die Kaapsekombuis word waargeneem deur primere bronne soos huishoudelike inventarisse,resepte en ’n oorspronklike lys Kaapse kokke. As sodanig haal dit verwaarloosde figureuit die skaduwees van die verlede en dra by tot dit wat voorheen geskryf is oor Kaapsekosgeskiedenis in die tydperk van die Nederlandse besetting, die essensiele bydraes vanslawe as kokke tot die kookkuns, en die verwantskappe tussen kos en status aan die Kaap die Goeie Hoop.
