"Bon Chretien" pears are grown under different climatic conditions in the fruit growing areas of the Western Cape. Year to year variation in the climate affects fruit maturation, which is assessed by maturity parameters, such as flesh firmness, fruit colour, total soluble solids content (TSS), titratable acidity and starch conversion. The length of the fruit growth period from full bloom to optimum picking maturity varies from year to year. The accumulated heat units and time from full bloom up to the optimum of the standard maturity indexing variables for fruit firmness, TSS, skin colour, titratable acidity and starch conversion were evaluated as physiological variables in an attempt to quantify year to year and farm to farm differences in fruit maturity. Similarly, the rate of change in a maturity indexing variable during fruit maturation varies from year to year. This is reflected in physiological differences in fruit from different years. The rate of change in a maturity indexing variable over time or heat units was evaluated to quantify physiological differences in fruit between years and farms. The length of the growing season from full bloom to optimum fruit firmness expressed as heat units showed a significant positive correlation with the full bloom date.
