Agrar (Crop Protection))--University of Pretoria, 2016. Mushrooms are important food additives because of their exceptional flavour, texture and high nutritional content. Fresh fruit and vegetables are increasingly associated with food-borne illness. Whilst food safety and quality assurance have been on the agenda of the food industry in general, the requirements of sector specific quality and assurance systems; such as for the mushroom industry; have not been met. A mushroom specific food safety and quality management standard is a critical need in an industry that is currently regulated with vegetable production systems. This study therefore focused on the development of a mushroom safety and quality management standard specifying the requirements that any organisation in the mushroom supply chain should demonstrate to ensure safe food products for human consumption. In the first part of the study, a diagnostic instrument (DI) was evaluated to measure food safety standard compliancy of 10 mushroom farms in South Africa. The farms were independently assessed for their horticultural safety management systems (HSMS) via indepth interviews with the quality assurance personnel at each farm. Insufficient performance areas in HSMSs noted included inadequate hazard analysis and analysis of control points, low specificity of pesticide assessment and inadequate control of suppliers and incoming materials. Recommendations to the industry were given and current inadequacies were identified to ensure a more adoptive improved industry wide food safety assurance system. In the second part of the study, assessment of available food safety standards and their applicability to mushroom growing was done on ten farms through a survey. Eight farms were large and medium-scale producers while the remaining two operated at a small scale. All large and medium-scale producers had food safety standards to which they were certified to, while small-scale farms were not certified. The study also revealed that the implemented standards were not „fit-for-purpose_ for mushroom production. Based on this, a specific food safety standard was developed as a „fit-for-purpose_ mushroom production guideline. Future work on this standard was recommended to focus on its global adoption.
