A factorial trial to study the effect of 50, 100 and 150 kg N ha⁻¹ and also 0, 12.5, 25 and 50 kg S ha⁻¹ on the growth, yield and baking quality of the spring wheat cultivars Palmiet and SST 66 was done on Langgewens Experimental Farm during the 1990 and 1991 seasons. The vegetative plant material production of Palmiet and SST 66 did not differ, while it was promoted by the increasing N fertilisation levels. Sulphur fertilisation did not have any noteworthy effect, but 12.5 kg S ha⁻¹ generally produced the highest plant mass when combined with 150 kg N ha⁻¹. The amount of N and S which had been taken up by the plant was also determined. The two cultivars did not differ in their ability to take up N and S. With increasing levels of N fertilisation, N uptake and N concentration in the plant increased. Increasing levels of N fertilisation also resulted in a higher uptake of S by the plants. Palmiet had a higher yield than SST 66. Increasing N levels increased the yield and yield components of both cultivars. The kernel mass was not significantly influenced. Sulphur fertilisation did not have any effect on the yield. The interaction between the main treatments did not have a significant effect on the yield or yield components. SST 66 had a better baking quality than Palmiet. An increase in N fertilisation improved the baking quality as a result of the higher protein content in the grain and flour. The bread volume also improved. The bread volume of SST 66 was improved by S fertilisation to the level 25 kg S ha⁻¹, after which it decreased. The bread volume of Palmiet was not influenced by S fertilisation.
