The purpose of the study was to determine which factors are responsible for the observed green colour of the Granny Smith apples, with the intention of increasing the intensity of colour. With the identification of the dominant pigment, chlorophyll, external factors as well as internal hormone and mineral relationships were considered, probably having an influence on the concentration of the pigment as well as the chloroplast. Only minerals and hormones which can be commercially applied were selected as they would have the minimal negative effects. These mediums were tested over a period of three seasons under a variety of field conditions. The chemicals that produced the most positive effect, were tested during in a series trials, of varying concentration and timing to determine the optimum date and concentration for the improvement of green colour and chlorophyll concentration. Fruit was also progressively from the normal harvesting date until three weeks after the normal harvesting date to observe what would happen to the chlorophyll concentration during this important period. The extraction of chlorophyll from freezedried peel of the Granny Smith fruit was done with 80% acetone. All the chlorophyll concentration determinations were done with the aid of a spectrometer. The green colour determination of the fruit was done with the aid of a colour meter. All results were statistically compared to determine the differences between treatments. A linear decrease in fruit chlorophyll concentration resulted after optimum harvesting maturity. Comparing the hormone (gibberellic acid, cytokinins and a mixture of the hormone "Promalin") and minerals (low biuret urea and iron chelate) it was only the low biuret urea that consistently, under most conditions, improved skin colour and chlorophyll concentration. The danger of leaf scorching is associated with this and recommendations concerning the concentration and application dates are made. Iron chelate also seems to have a positive effect on the green colour without significantly influencing the chlorophyll concentration.
